SAÓR Knowledge Flavors - from 27 to 29 September 2019

“Saór - Knowledge Flavours”, the first city festival dedicated to the local gastronomic heritage. This event will become an appointment for all those who love Venice for its beauty and its savory goodness. The festival aims to create a meeting point between the local actors of the Venetian food system (producers, restaurateurs, traders, city associations, schools, operators of sustainable tourism) and all citizens and visitors who wish to appreciate, preserve and enjoy the most authentic Venice.

SAÓR will take place on the weekend of 27-28-29 September 2019 throughout the city. There will be a series of events, spread between the ancient city and the mainland, dedicated to local food and gastronomy seen as a symbol of identity and cultural heritage of the Venetians.

In addition to the Venice-area events, in the same days, SAÓR also arrives in London. In the POLPO restaurants there will be a special dish made fo SAÓR: Mackerel Tartare with horse-radish on dry bread sheets (Pane Carasau).

SAÓR is part of the European "SlowFood-CE" project, coordinated by Slow Food International and financed by the Community programme INTERREG Central Europe.

The "SlowFood-CE" project aims to develop tools and strategies for the enhancement of the local gastronomic cultural heritage as a motor of sustainable development of the territory. "SlowFood-CE" involves, in addition to Venice, four other European cities – Krakow (Poland), Brno (Czech Republic), Dubrovnik (Croatia) and kecskemet (Hungary) - supported by the respective local Slow Food and supported by the University of Gastronomic Sciences of Pollenzo.
